Chickpea coffee emerged in Greek culture mainly during the difficult times of World War II and the Occupation when authentic coffee was scarce and prohibitively expensive. In these circumstances, Greeks sought alternative ways to continue enjoying their beloved beverage. They began roasting foods such as chickpeas, broad beans, and barley, making a caffeine-free coffee with a warm aroma and similar texture.
During this period, “tabides", the coffee vendors of the time, often “tricked” their customers by serving chickpea coffee as authentic Greek coffee. Although milder in taste, this substitute closely resembled regular coffee in appearance, and because real coffee was so rare, few complained. As a result, chickpea coffee became established in everyday life, either out of necessity or creativity, and remains in collective memory as proof of people’s resilience and adaptability during the hardest times. Today, it returns not out of shortage, but by choice, as a natural, alternative beverage with roots in Greek history.

GREEK COFFEE FROM CHICKPEA
The powder from roasted chickpeas is boiled in a cezve with water, just like traditional Greek coffee. You can add sugar if you like. A foam and “kaimaki" will form, and there will be sediment in the cup.
Ingredients:
- 1 cup of water
- 1 heaping teaspoon of chickpea powder
- sugar (optional: ½ or 1 teaspoon)
Instructions:
Place all the ingredients in a cezve, stir well before boiling, and place over medium heat. Once it starts to foam, remove from the heat and serve with “kaimaki."
FILTER COFFEE FROM CHICKPEA
The powder is used like filter coffee. It is placed in a filter or French press and extracted with hot water. The result is a clean, mild beverage with a light taste and roasted aroma.
Ingredients:
- 1 tablespoon of powder for every 200ml of water
- boiling water
Instructions:
Place the powder in the filter or French press. Pour hot water over it, let it steep for 4-5 minutes, and serve. The taste is clearer and lighter.
ICED COFFEE FROM CHICKPEA
After preparing the coffee, you can let it cool and shake it with ice, offering a caffeine-free alternative for those who love iced coffee. It’s also ideal with a bit of plant-based milk for a smoother taste.
Ingredients:
- 1 tablespoon of powder
- 150ml boiling water
- ice
- milk or plant-based drink, sweetener (optional)
Instructions:
Prepare the chickpea coffee (in a cezve or filter), let it cool, place it in a shaker with ice, and shake well. Add milk if you wish.
