Chios mastiha: A unique product worldwide!

Chios mastiha, a product with protected designation of origin, is exclusively produced in the southern part of Chios from mastiha trees, also known as lentisk. Although they are classified as shrubs, they can reach three or more meters in height. This unique aromatic resin has numerous uses and is a key pillar of the local economy. In health, personal care, and gastronomy, mastiha works wonders with its unique characteristics.
The cultivation of mastiha follows traditional methods and includes four basic stages: soil preparation, incision, collection, and cleaning. Soil preparation involves cleaning and smoothing the ground around the tree, creating a surface known as a “table," which is covered with white soil. Incision involves carving the trunk of the mastiha tree with a small carving tool, from which the mastiha flows.
Collection occurs after the mastiha has solidified and includes gathering the coarse mastiha from the trunk and branches of the tree. Cleaning is a long and difficult process, during which the mastiha is sifted, washed, and cleaned of foreign matter with pointed knives. The cultivation of mastiha is not a simple task; it follows traditional methods to remain natural, despite the introduction of technology and new tools, and is deeply tied to the local identity and culture.
