The cocoa and its history!

The history of cocoa is a fascinating journey that begins with the ancient civilizations of Central and South America and extends to modern times. The first people to discover and appreciate cocoa were the Maya and the Aztecs. For them, cocoa was not just a food but a valuable commodity with significant roles in religion, economy, and daily life. The Maya cultivated the cacao tree (Theobroma cacao) and primarily used it to prepare a bitter beverage made from cocoa, pepper, vanilla, and other spices. This drink was sacred and associated with rituals and religious practices. The word “cocoa" comes from the Maya word “kakaw," while the scientific name of the tree, Theobroma, means “food of the gods" in Greek. The Aztecs later adopted cocoa cultivation and used it as currency and a symbol of social status. Cocoa’s impact spread to Europe when Christopher Columbus discovered it in 1502 during his voyages to the Americas. Spanish explorers, like Hernán Cortés, brought cocoa back to Europe, where it was initially considered a luxury item and consumed mainly by the aristocracy. Europeans added sugar and milk, transforming the bitter Maya and Aztec drink into what we now know as chocolate. Cocoa cultivation quickly spread to tropical regions in Africa and Asia, and today, cocoa is one of the most beloved and recognizable ingredients worldwide, used in a variety of sweets, desserts, and beverages.

The process of turning cacao beans into cocoa powder involves several stages. First, ripe cacao pods are harvested, and the seeds are extracted. These seeds, known as cacao beans, undergo fermentation and drying to develop their characteristic aroma. Next, the dried cacao beans are roasted to enhance their flavor. After roasting, the beans are ground to produce a cacao paste, known as cacao mass or cacao liquor. This paste is pressed to remove the cacao butter, leaving behind the solid substance. This solid is ground again to produce fine cocoa powder, which is used in various recipes, offering the rich flavor and aroma of cocoa.
