Sweet journey full of art and tradition 

How did this tradition begin on the island of Syros? The authentic technique was brought to the island by Chiot and Psarian refugees when their islands were devastated. The first cauldron was made in 1832 in the port of Ermoupolis, and since then, a long and successful tradition in loukoumi production began, with the establishment of many loukoumi workshops. Syros loukoumi is one of the most popular and beloved desserts, rightfully included in the National Intangible Cultural Heritage index of our country!

But what makes it so special? 

Why does this loukoumi differ from the others? Locals believe that its distinctive flavor is due to the water. Syros is an island with very few sources of brackish water. This unique water used by loukoumi makers gives Syros loukoumi its characteristic taste! Of course, loyalty and devotion in the traditional technique of its preparation also plays a very important role in the quality of the final product.

Unveiling the secrets of Syros loukoumi 😉

Syros delight, or loukoumi, is the island’s most celebrated sweet, renowned for its distinctive taste and exceptional quality. The fundamental ingredients—water, sugar, starch, and a variety of flavors—combine to give each piece its unique character. Every box of loukoumia encapsulates the rich history and passion of the artisans who craft it.

Creating this iconic treat demands dedication and skill. The mixture is carefully boiled in copper cauldrons set in built-in fireplaces with fire bricks, constantly stirred until it reaches perfection. It’s then poured into floured trays to cool, cut into pieces, lightly dusted with powdered sugar, and meticulously packed in cardboard boxes that preserve its freshness and texture. The secret to Syros loukoumi’s success lies in the precise balance of ingredients and the slow, attentive boiling process. 

The flavors of Syros loukoumi range from traditional rose and mastic to contemporary variations with fruits and chocolate. Among the many, Livadaras loukoumia are distinguished for their unparalleled taste and variety, offering a delightful experience with every bite.

Livadaras family: 100 years of dedication to tradition 🧡

In Ermoupoli, several loukoumi workshops operate, with the most renowned being that of the Livadara family, which recently celebrated its 100th anniversary since its founding in 1923 by refugee Antonis Livadaras. Antonis Livadaras, dedicated to traditional craftsmanship and using the purest ingredients, experimented with new compositions and flavors, enhancing his reputation locally and nationally. The quality of their products was recognized with a ‘Gold Award’ at the International Thessaloniki Fair and a second ‘Gold Award’ at the First Pan-Cycladic Exhibition of Traditional Products in 1936, confirming their reliability and high standards.

Back then, everything was handmade. From the boxes for loukoumia to the wooden crates, Antonis Livadaras and his staff packed fresh loukoumia, usually in packs of five. All products were shipped to Athens and throughout Greece, where ‘Livadaras loukoumi’ had gained many devoted fans.
During the early decades, before the introduction of machinery in Antonis’ workshop, daily delight production was a small ritual involving all employees. The tradition continued through his sons, Andreas and Vangelis, who took over the business with the same dedication and care.

In 1984, significant changes occurred. The founder’s grandsons, Antonis and Vasilis, assumed management and introduced modern equipment, increasing productivity and exports. The company added new flavors to the traditional repertoire, such as chocolate and almond, while maintaining their grandfathers’ authentic recipe for delight preparation.

Despite these changes, one thing remained constant: the traditional recipe. Livadaras family continues to uphold their grandfather’s recipe, using the same pure ingredients and modern machinery to ensure the unique taste and quality of Syros delights.
